Hey Douglas,
CentOS 6 is a nice OS and I am releasing RPMs for it(now 3.4.8 out).
If you are using AWS they have a modified version of CentOS\RH which
they update and kind of support.
Self compiled for a cloud based machine to me seems a bit weird but
maybe sometimes can be effective.
The main issue is that no even one official release of ubuntu or
centos (maybe even debian) do not support\supply ssl-bump build.
I prefer ubutnu\debian for many things.
I was also working on a deb based build (for ubuntu) and now it's on
the alpha stages(not released yet)
I added a bug report for a specific issue with ssl-bump at:
http://bugs.squid-cache.org/show_bug.cgi?id=4115
There was also a recent memory-leak report for 3.4 which is being
investigated as we write.
Before you decide on a version I recommend you to plan the whole setup
and see how it should be better implemented and also test it deeply to
match your criteria.
All The Bests,
Eliezer
